Adrian's Digital Basement Nerd fixes old computers.
Adrian's Digital Basement II Same nerd fixes more old computers.
Mac 84 Different nerd.
Branchus Creations Another nerd but also Australian. And he gave me some excellent soldering technique tips during a couple livestreams.
Mr. Carlson's Lab Canadian nerd, mostly radio rebuilds.

Honey Badger Woodworking Super precise woodworker. Learn something new every video.
Stud Pack The dad is a font of tips on keeping things very, very precise when doing remodeling work.
South Main Auto I'd say it's like fixing cars with your conservative drunk uncle, but he's actually younger than me? He's got a gift for electronics diagnoses.

History In General:
Nicole Rudolph History of culture and design mostly. I follow it for the old house design/decor stuff.
Ask a Mortician History and topics related to death, funerals, etc.
Drachinifel British centric naval history channel.
Well There's Your Problem "Dudes rambling into microphones" podcast, but one of the dudes is Alice and they talk about systemic issues and social murder a lot. Alice also produces and makes a few other podcasts worth following.
Mentour Pilot Used to be more general aeronautical stuff, but now it's mostly disaster porn.

Other:
Laurel & Hardy (The recent biopic "Stan & Ollie" with John C. Reilly was excellent.)
Quick Questions Typical talking-head-bros podcast but they're actually interesting and funny people.
Patrick BoyleApparently he actually IS a business professor and hedge fund manager - for quite a while I assumed he was a comedian doing a bit. His memecoin video is must-watch.

Technology Connections is some good shit.
Patrick Boyle is fantastic as well.

Some additions:

LazerPig - Military Tech vblogger who actually knows his shit and does research
The Money Guys - Finance Show I enjoy. I appreciate their conservative takes, and they don't tend to rage bait. Can get a bit repetitive.
Redline Reviews - My go to car review guy.
Throttle House - More cars, more goofy, also great. Somehow, they are the new Top Gear? Eh, they deserve it.
Sorted - Food shenanigans. I consider this popcorn content; and it's in good faith (to me).

Not a Youtube link, but if you like history you are doing yourself a disservice by not knowing about Dan Carlin's Hardcore History. So. Fucking. Good.

D3 Shooter - old German race car restorer/driver, gave a surprisingly cogent exposition on how Weber carbs work, and does conscientious, well filmed restorations
Garage Tinkering - IoT/embedded programming for CANbus applications
Brass Against - Metal songs covered by a brass band and some amazing vocalists. Great arrangements. Check their Tool and RatM covers.
MyMechanics - a Swiss fella restoring a Datsun 240Z with more attention to detail than I will ever have

Technology Connections is definitely a top tier channel for pretty much anyone who frequents this board.

These are probably what I watch the most

Religious: (religious topics, not religious services)

Centre Place - The pastor is gay, but he almost never brings it up. He is an excellent scholarly historian and really brings a lot of important academic scholarship context into his videos. Actual academic scholarship, not the "make it fit religious dogma" scholarship.
James Tabor - Excellent scholarship especially on the Dead Sea Scrolls and the Synoptic Gospels

Science:

Gutsick Gibbon - She's an effin' rock star when it comes to making my former YEC viewpoint look ridiculous. But that's not why I like her channel, I like her channel because she frequently reads important academic paper and explains them in a way that people without a graduate degree can comprehend them.
Central Washington University - Various topics but I subscribed to watch some of their Cascadia Subduction Zone lectures.
USGS Presentations - Lots of cool Geology stuff, I especially like the volcano stuff but their scope is so much bigger

History:

History Time - Really cool videos that I love falling asleep to.
History with Cy - More really cool videos that I love falling asleep to.
