I really like the concept of a Google Docs like system, but hosted on my own server. As it is, I still use Google Docs for most of my hobby writing because it is easily accessible. I'm honestly amazed that this is the only alternative I've found that offers to let you install it on a private server so that you can provide your own SaaS solution to yourself.

Don't be - it's hard to do. Atlassian has been promising interactive editing in Confluence for years now, but last I heard it was still "almost ready."
