Coeliac disease is a thing. One of my staff had to be rushed to hospital because her stomach lining has been attacked so often by her immune response to gluten. She will probably need surgery to removed damaged parts of her intestine eventually.
There is no need for someone without a severe Coeliac immune response to forgo it, but gluten free foods exist for a reason. I keep my shop kitchen stocked with gluten free alternatives for her.

True, and good for you for being such a good boss.
BUT it is also true that there are a LOT of people who assume that "gluten-free" is something that they have to worry about when only about 1.5% of the population actually have celiac disease. There are people who tell others that they or their children are "gluten intolerant" or some such nonsense term. There are even some quack doctors who apply such terms to their patients and prescribe some dietary regimen, maybe including some special dietary supplement which ONLY they can provide to "prevent problems from gluten intake".

While I may or may not know somebody that has shot 3 beaver over the last year or so, trapping is a lot better way of eliminating them.
